"Popular Chicken Adobo"





Chicken Adobo, also known as Adobong Manok in tagalog, is a stewed chicken meat in a mixture of garlic, vinegar and soy sauce. It is a very popular Filipino recipe in the Philippines and almost every household knows how to prepare it for lunch, dinner, and even breakfast. In fact, it is a signature dish of the Filipinos. It is being served on special occasions like barrio fiestas, birthdays, Christmas, noche buenas, christenings, weddings, meetings, reunions and other important gatherings. 

The vinegar marinate makes a dish that stores very well in the Filipino heat. Endless varieties of adobo exist and each region has its own specialty. Here are the ingredients to make Chicken Adobo:

  • 1 kilo chicken; cut into small sizes
  • 1 head garlic; pounded
  • 1 small onion; chopped
  • 4 dried bay leaves
  • 1/2 tablespoon peppercorns
  • 6 tablespoon soy sauce
  • 6 tablespoon vinegar
  • 1 cup rice water
  • 1 tablespoon oyster sauce (option add-on)
  • cotoking oil
Here are the steps on how to cook Chicken Adobo:
  1. Marinate chicken in soy sauce, garlic and peppercorns for 30 minutes.
  2. Fry onion, then drop the marinated chicken and bay leaves.
  3. Continue frying until liquid has evaporated and meat starts to render fat.
  4. Pour the marinate including the bits of garlic and a cup of rice water. Continue boiling in medium heat until chicken becomes tender.
  5. Pour vinegar and simmer it for 10 minutes.
  6. Prepare the dish and serve it with rice!
